How cooking affects nutrients
- Cooking destroys most of the vitamin C in the food.
- Cooking destroys some B vitamins.
- The other vitamins are not significantly lost in cooking.
- Cooking does NOT destroy minerals.
- However, you WILL lose minerals
if you boil the food and throw away the water.
- However, you WILL lose minerals
- In some cases (such as carrots or beets), cooking actually makes the nutrients MORE available.
- Or to achieve this without cooking, you can do a freeze thaw puree.
Why cooking doesn't destroy minerals
Minerals, in the context of food nutrition, refer to elements on the periodic table. They cannot be created or destroyed (except in a nuclear reaction). Vitamins, on the other hand, are molecules (which break down far more easily than atoms).
